Spinach is believe to have originated in ancient Persia and then spread on to other parts of the world. In ancient China, it was known as persian vegetable. There are three types of organic spinach namely Savoy which has dark green and curly leaves, Smooth leaf spinach which have broader leaves and the semi-Savoy variety which is the hybrid of the above two. During the depression era in 1930s, there was surge in the sales of spinach by over 30% in the U.S and this was because of the famous cartoon character Popeye who advocated his love for spinach in his stories. Artists in the Medieval times extracted the green colour pigment from organic spinach to use as ink or paint.
